Cheese-Topped Baked Potato & Salad

The Menu: Baked potato with avocado, WayFare cheddar cheese, and WayFare sour cream—plus an organic salad with Romaine lettuce, shredded carrots, olives, and yellow pepper

The Goods: After a week off to celebrate the holidays with our families, we're back at the VNHQ! We hope everyone had a wonderful week, and our team is so excited for 2012 (just wait to see what we have in store for you!). And after a month of what seemed like endless amounts of chocolate and cookies, I am craving healthy lunches—like this baked potato and salad.
