Vegan Pizza Forever!

The Chefs: Rashida and Paxti's Chicago Pizza

The Menu: Vegan deep-dish pizza with spinach, red onions, and melted Daiya cheese, topped with crushed garlic.

The Goods: There are few things better than a steaming-hot vegan pizza delivered to your doorstep, especially when the view outside your office looks like this and all you want to do is have a dance party to '70s hits indoors, where it's dry and warm (true story—this just happened). I promised myself that I would abstain from anything but salad and greens for at least a week following our trip to Expo West, at which I definitely overstuffed myself sampling our Best of Show contenders … but one mention of Patxi’s gooey, cheesy, spinach-and-onion-loaded pizza had me abandoning my ascetic intentions faster than you can say “juice cleanse.” Health shmealth, pass me another slice!

Celebratory Pizza Party

The Chefs: Hilary and Patxi's 

The Menu: Two fat slices of vegan deep-dish pizza stuffed with vegan cheese, spinach, and onions, and topped with zesty red sauce and garlic. 

The Goods: Today is the best! After a rousing design meeting of putting the finishing touches on our March+April issue—including our amazing cover idea—I scored tickets to Coachella Music Festival after hovering in an online queue for upwards of an hour. Might I mention that this year's lineup is loaded with vegan artists, including Thom Yorke of Radiohead, Jeff Mangum (formerly of Neutral Milk Hotel), Cedric Bixler of At the Drive-In, and Dennis Lyxzen of Refused. If you're as stoked as I am, check out Global Animal's post about veg-friendly Coachella. Celebration was in order, so we decided to indulge in some insanely good vegan deep-dish pizza. Vegan Deep Dish

The Chef: Paxti's Chicago Pizza and Colleen

The Menu: Gooey, stretchy Chicago-style deep-dish vegan pizza from Paxti's Chicago Pizza. This intensely stacked pie boasts robust, spicy sauce, melty Daiya cheese, and a mountain of doughy, chewy crust. In addition to our sizable slices of pizza, we dined on a lovely side salad of kale, cabbage, greens, and cucumber courtesy of Ms. Colleen.

The Goods: Vegan deep-dish pizza! Truth be told, today's lunch was recycled leftovers from last evening. Following our fun evening at SF Vegan Drinks, the VN staff celebrated Brooke's first month on staff by chasing our martinis with delicious deep-dish pizza. We're not proud to admit that there were leftovers, but in our defense, we ordered a ridiculous amount of pizza.
