The Chef: Liz
The Menu: Some of the best freakin' quesadillas we've ever had. No joke. Liz not only stuffed these crispy tortillas full of Daiya, tomatoes, onions, and mushrooms, she also added a sneaky layer of WayFare Foods' Mexi Cheddar-Style Dip to the rich filling, and yeah. Let's just say that there are not leftovers today. Though Liz did incorporate leftovers from yesterday's lunch into her salad, which made a hearty addition to the standard romaine and avocado. She also fried up some homemade tortilla chips, which we totally devoured with more of the Mexi Cheddar. And, just for kicks, Liz whipped up some brown rice. We like brown rice.
The Goods: Yes, quesadillas with two varieties of vegan cheese are pretty thrilling. A note of caution: if we had the means to prepare our own body weights in 'dillas, we would, and we're pretty sure that you'll be similarly enthused/addicted. Eat with care.

I wish there were more vegan cheeses in my area! Those look so so yummy and now I want one. :)
Does VN have any news about when/whether Daiya will be available in stores? I keep hearing about it from y'all and the suspense is killing me!!
I live in Charlotte, NC and have asked several stores to carry your brand without much luck. :( I use Veggie Shreads and they are good, but I know not as good as Daiya!!!

To VegNews readers looking for Daiya vegan cheese ... I have been emailing Trudel at Daiya and she told me that due to the overwhelming response from the public, they are 'fast tracking' their retail launch of Daiya and are also planning to build their own dedicated factory, so they can use their own equipment and not "wait in line" for production of Daiya on other manufacturer's machines. That is good news for those of us waiting for it to show up in local retail stores other than Whole Foods Markets. Trudel said they are planning for a Spring 2010 retail launch. In the meantime we should all continue to request this product from our favorite grocery stores ... if they KNOW there is a demand for this product, they will hopefully add it to their line-up. And it is the BEST vegan cheese I have ever had, I have to say. Let's keep our fingers crossed that Daiya is available everywhere - sooner rather than later :) :) :) !
