The Chef: Lyndsay
The Menu: A yummy, meat-free meatloaf, courtesy of Field Roast Grain Meat Company, which Lyndsay topped with the traditional ketchup and then slathered in a homemade gravy. Where did she find a recipe for gravy? That would be over on VegWeb.com, of course! Her green salad was lovely as ever, and you might have noticed some seriously thick-cut potatoes up towards the top of the plate. Those would be the Three Spice Potatoes from the new VeganYumYum cookbook!
The Goods: So, it would probably be really mean of us to tell you that we just happen to have five copies of this long-awaited cookbook here in the office, and not give them away, right? Good news! We're totally giving them away! We'll do one each day this week, and we'll be featuring a recipe from the book every day at lunch. I absolutely cannot live without "Please Don't Feed the Bears" printed by Microcosm in Portland, OR. For me, cookbooks serve as inspiration, not as something that has to be followed to the letter, and this one inspires me to no end! Thanks for letting me share :)
I really love all of Happy Herbivore's e-cookbooks, and I really hope she has a printed one published! Her recipes are delicious, healthy, and easy to follow.

Can not live without Vegan Planet, there's a recipe for everything in there. Plus 2 of my kids favorite meals come from that book.
Vegan with a Vengeance. My first vegan cookbook and the one I use the most. Love.
Right now I can't live without Peta's Vegan College Cookbook. The recipes are perfect for a busy student with a limited budget and a tiny kitchen (shared with 8 other girls!!).
I can't live without 'Great Vegetarian Cooking Under Pressure'. It helps me, a lazy cook, make yummy vegan meals in my electric pressure cooker while doing barely any work.
Vegan with a Vengeance is definitely the book I use the most right now, but if I were stranded on a desert island...or more practically when I was in college and studied in Russia, the Farm Cookbook was my savior. Simple ingredients, simple recipes.
'Vegan Brunch!' I'm addicted to great breakfast food. The Perfect Pancakes and Shiitake Dill Frittata are the best! I cook a breakfast from that book at least three times a week.
I was going to say Vegan Cupcakes Take Over the World, but cupcakes aren't a food group, are they??:-)
My go to cookbook is How it all Vegan by Sarah Kramer. It was one of the first vegan cookbooks I bought and really helped me at a time when I didn't have a lot of time to cook. It has lots of quick, tasty and healthy recipes and even though I've accumulated quite a few since, this one still has some of my favourite recipes.
The cookbook I can't live without is Vegan with a Vengeance; it's a delicious classic!
Gotta have Joy of Vegan Baking. With savory food, I can kind of wing it, but baking is a science, and every recipe in this masterpiece gets it right!

I have to go with Vegan Vittles as my go-to cookbook. It was my first vegan cookbook and it's the one that I always go to fist.

Vegan Cupcakes Take Over the World! No other book could have shown how awesome vegans and their delish recipes are as well as that one. Whenever there's a party for one of my HS classes, I open that baby up, get a bit carried away, and come to class the next day with the best goddamn cupcakes you've ever seen.
The Joy of Vegan Baking. Everything in it is perfect.
The Gluten-Free Vegan.
My boyfriend has Celiac disease, so it's wonderful to have a one-stop resource for vegan AND gluten free cooking. It also has the best GF pizza dough recipe on the planet.
The Compassionate Cook! It was my first ever vegan cookbook, and has been my standby for the past 10 years. Total cozyface.
"Vegan With a Vengeance." Sure, it's simple, but it's the sort of thing you can whip out, flip to any given page, and have something awesomely delicious whipped up in minutes. My copy is dog-eared and food-stained, but I can't live without it!

Do I really have to choose just one? There are so many great vegan cookbooks around! Actually, I suspect the one I won't be able to live without is soon to be coming out: that would be "500 Vegan Recipes: An Amazing Variety of Delicious Recipes, From Chilis and Casseroles to Crumbles, Crisps and Cookies" by Celine Steen and Joni Marie Newman. I just love Celine's creativity, and I'm sure that very comprehensive book will quickly become an indispensable in my kitchen! Thankfully, the wait won't be too long now...
Well, considering I only have two vegan cookbooks, and two of them contain only desserts... I'd have to go with Vegan with a Vengeance!
Can't live without Nonna's Italian Kitchen by Bryanna Clark Grogan. Loads of great recipes in there, & several 'staples' that we make regularly.
Must have Vegan with a Vengeance. One of my first and still my favority.
Eat, Drink & Be Vegan! It's the best combination of easy/healthy/gourmet that I've found!

Veganomicon was my first vegan cookbook and it's the one I go back to for the basics and day-to-day cooking as well as any other occasion!

I absolutely cannot live without the The Joy of Vegan Baking cookbook by Colleen Patrick-Goudreau! It is so informative and has so much basic information about changing your baking habits easily. Plus all the great recipes!

I've gotten a good bit of use out of the online books from HappyHerbivore.com I love the ingredients that she uses to make healthier versions of meals that are still super yummy!
My go-to book is Vive Le Vegan. I've made just about every recipe in that book and I know they'll always work and taste fabulous!

To be honest, there isn't ONE vegan cookbook. I rely mostly on vegan cooking blogs and Veganomicon is probably the cookbook I use most often!
My 21-year-old daughter has just moved into a vegan co-op house and so if I win this book I'll be sharing it with her!

Definitely Vegan With a Vengeance. It was my first vegan cookbook, and the tofu scramble recipe is my stand-by favorite.
Vegan Planet. It has everything and doesn't call for fake cheeses or meats.
My partner and I couldn't live without "Vegan Soul Kitchen", by Bryant Terry. Until I discovered this book, she was really missing the flavors she grew up with (though why anyone would miss ox tails and turkey necks, I don't know). Her mother was inspired by the recipes so much, she is considering becoming vegetarian.
I am so excited for this giveaway because I do not have ANY vegan cookbooks yet. Just reading through the comments gives me a lot of ideas, some are already in my amazon cart.
I love looking at vegan blogs and I am always trying to make yummy foods that my family will love without feeling deprived as I drag them along on my new journey! Thanks for inspiring me with your blog!

Sorry, I can't pick just one! It's either Veganomicon or Eat, Drink & Be Vegan. I love them both equally and have made so many recipes out of both. I love ED&BV for the soups especially, and Veganomicon for the salads especially. Both have great entrees, dressings, and desserts. I love how healthy Dreena's recipes are, but I love how V'con is such a complete cookbook...truly the ultimate vegan cookbook as its name proclaims!
I have cooked nearly everything out of Veganomicon - it basically taught me how to cook. I also love Vegan Yum Yum and have made a great number of her recipes - they're always a hit!
The New Farm Vegetarian Cookbook! Seriously, it's old, and funny, and full of the best, healthy recipes for anything you could want to make.
Becoming Vegan by Brenda Davis and Vesanto Melina. It's not just a cookbook, but there are some fabulous recipes for soups and sauces in there.
It has a special place in my heart because I was reading it when I decided, once and for all, to go veg.
I don't know how anyone can live with just one when I have a handful that I rely on:The Joy of Vegan Baking, Veganomican, Vegan with a Vengeance, Vegan Cupcakes Take Over the World, McDougall's Quick and Easy Cookbook, and MANY more. But I've really been enjoying ExtraVeganZa lately.

Bryanna Clark Grogan's book "Nonna's Italian Kitchen" taught me how simple it was to make my beloved Italian cuisine vegan so I have to go with that one.
I'm a huge fan of the vegetarian times cookbooks, and most of the recipes are either vegan or easily veganized which is great!!
Tough to pick just one, but I'll say Vegan with a Vengeance. Everything I've made out of it has been awesome, and I still have so many things left to try!
Veganomicon! My first Vegan cookbook...Penne Vodka is a fast, simple, "creamy" pasta sauce that first made my husband go, "Wow. Maybe vegan cooking isn't so weird, after all!"
