The Chef: Colleen
The Menu: A delicious, veggie-filled soup with lentils, sweet potato, broccoli, and eggplant that Colleen cooked in a light broth with Indian spices. She also made a light, crunchy salad with her signature garlicky balsamic vinaigrette. And then, there was pizza. As you might remember from Wednesday, Vegan Essentials recently mailed us some frozen vegan pizzas. Yes, that makes them our favorite. Colleen simply topped the frozen pie with some fresh rosemary, and it was fantastic.
