Cookbook Week: Sweet Potato-Lentil Stew

The Chef: Abby

The Menu: A light, lovely soup with lentils and sweet potatoes, as you might have assumed from the title. Sides of red quinoa and steamed broccoli continued the warm, homey trend, and a fresh spinach salad with orange sections and sunflowers added a little color to the plate. For dunking, where would we be without bread?

The Goods: The end of Cookbook Week is upon us, and we have just one more copy of Alicia Silverstone's The Kind Diet to give away. First, a hearty congratulations to Tanya from yesterday's comments! Tanya, send us an email, and we'll send your book right out. So now that we are at the end of the week, let's talk weekend plans. I am going to support a local vegan cafe this weekend and on my way there and back I am going to say a blessing for every person who drives badly on the way rather than curse at them. I live in Boston so this will probably be a lot of blessings spoken.

I'm going to be taking care of my mom's limping, deaf, bed-wetting dog. She's still a puppy to me, even if she is almost 15. I plan on loving her to pieces and then loving her a little more. :)

I'm going to help out my Mom who isn't feeling well by getting us food and a movie. I am going to tell my friends how much I appreciate them. I am going to do random acts of kindness. I've noticed just one word can change someone's mood. Also, I'm going to make comforting healthy food for the family!

I am going to work on my Graduate Thesis-- an animation about the environmental impact and moral predicaments of meat production. Hopefully it will make people stop and think twice about what they are eating. :D

I'm getting together new blankets & sheets & nutrition bars to send to FL on Monday. They are collecting for Haiti to ship out next week. I'm also going to send vegan baked goods for all of the volunteers in FL to enjoy while they work so hard to get everything organized!

I'm gonna sign up to volunteer for the Green Festival, which promotes everything about green environment, recycling, vegetarianism, sustainability, etc. I'm also going to volunteer to help bake vegan cupcakes and desserts in my community.

Well, gosh, I'm not doing anything remarkably kind this weekend but here goes. I suppose it could be interpreted as kind!

I'm doing my own version of recycling by going out to estate sales and thrift stores all morning. I then hope to hit the new-ish vegan pizzeria, Peace o Pie. Not only is that kind to animals, but to my belly as well. :D

I'm applying to be a spokesperson for Malaria today! On Sunday I will be going for the first time to my new church --> The Unitarian Church =) who supports gay and lesbian marriages.

In the past I tried never to be kind - how sad is that!?! I overcame that terrible life over 20 years ago and am so grateful that I practice kindness daily! With that - this weekend I will donate some more money to a charity helping Haiti!! Wish I could give it all!! I am also making some vegan banana bread for the neighbors!! May all who post a comment receive a blessing for the kindness they will do this weekend!

I am volunteering to raise money to provide nutritious meals (including vegan meals!) to people living with HIV/AIDS. I consider myself lucky to be able to offer my time to such an amazing cause.

I'm going to throw a little welcome party for freshmen who are new to the singing group I'm in charge of at school. This way they will feel comfortable, have fun and meet all the other girls in the group! I can't wait :)

I'm taking in a returned rabbit tomorrow then taking him and my 2 foster rabbits to an adoption day on Sunday (House Rabbit Society of MD/DC/NoVA - http://rabbitsinthehouse.org)

I also plan to spend MLK day working on a video to encourage people to only buy chocolate rabbits and not live rabbits as Easter presents. Our rescue gets so many post-Easter dumped rabbits!

In non-rescue related activities, I want to spend some quality cuddle time with each of my animals so they know how they are loved. I also want to cook some tasty meals and post about them on Facebook to get people excited to try vegan food!

Tomorrow I'm donating blood, supporting my local rollergirls, and attending a dog and cat rescue group benefit. Then I'll spend the rest of the weekend sleeping, so I'll be well-rested and pleasant when I return to work on Tuesday.

I'm going to go to my local vegan pledge event tomorrow in Philly and finally get it down in writing. I've been really good with my transition to vegan so far and I'm loving it. I'm also working on converting my omni husband which is a herculean task unto itself! :-)

i am going to be kind to myself by relaxing in between crazy design sessions at school while being kind to animals by focusing on vegan eating as opposed to my normal vegetarian-esque ways!!

This recipe looks delicious! I plan on being kind this weekend by helping out a bunch of shelters and food pantry's. Actually, the whole family is involved. We have been collecting food, clothing, animal food and kitty litter and every day essentials to drop off a the Lehigh Valley Donation Center.
I will also be kind to my body by packing my lunches for work and they will be completely vegan.

Starting out the weekend by rubbing errands with my wife & 8 month old son...picking up an old some old furniture from work to fix up & use at home...grabbing a few things at the grocery store to make for TV snacks...just enjoying each others company after being "apart" all week.

My mother in law has been sick and her doctor told her no fats or diary so we are making her a big tray of veggies and fresh fruits. Hopefully when she gets all that nasty stuff out of her, she will feel better and hopefully start eating kinder.

Friends of mine have been expressing an in creasing interest in transitioning to a vegan diet, so I've offered ( and they've accepted, yay!) to come over Sunday evening and make a massive vegan feast, pulling from my fave vegan cookbooks and raiding both of our pantrys. The idea is to demonstrate how easy and fulfilling plant based eating can be- as well as fun, creative and of course, the ultimate act of kindness, for the animals,the earth and our bodies.

Today, I practiced yoga with my normally non-yogi husband and ate dinner at a green cafe. Tomorrow, I am practicing yoga again and then making raw donut holes with some of the girls I mentor!

As selfish as that sounds, I'm very much in need of a healthy dose of kindness to myself. So, in between working and catching up on stuff, I'll be doing yoga, meditating, journaling, going outside for a walk, and going to bed early. I'll also bake a cake (a vegan one, of course!) as a treat to share with my gentleman friend. Yum!

Tomorrow I'm making some vegan dishes to serve at my friend's party (I've convinced most of my friends that vegan food isn't gross) Sunday, I'm going to be making aromatherapy pillows for my friends who are stressed out, then hitting up the local church's book sale to recycle my old books and get new ones. Every week, I buy a random homeless person a meal and since I haven't done it yet, I'll be accomplishing that over the weekend. As for myself, I'm in the middle of a bi-annual 30 day fast, so my carbon footprint is lower and I'm cleaning my body from the inside out.

I'm donating to Haiti, packing up a healthy vegan snack pack for my husband who travels a lot and is hitting the road again, smiling at every person I see on my daily travels, doing self-Reiki for kindness to myself, sending distance Reiki to the planet (daily)with a concentration on Haiti and loving the earth every way I can - energy-wise and vegan-wise.

i am going to be kind by starting from the inside out. first, i will let myself take a break from my hectic life and just enjoy cooking and doing yoga. after that, i will be able to resume, and help my grandmother take care of my grandfather as his health is swiftly declining.

I'm cooking with kindness! I'm having a bunch of non vegans over for dinner tomorrow night and I spent all day today making up a 100% vegan menu... chipotle black bean soup, corn bread and peanut butter chocolate chip cookies. The easiest way to convert is by making DELICIOUS food. yum!

The weekend is over, but I was kind by rearranging my work schedule to accompany a friend to the doctor and watch her adorable toddler. And then, more in keeping with the vegan theme, I asked my local co-op to carry my local raw, vegan ice cream.
