The Menu: A hearty, filling bowl of three-bean chili. This super satisfying main starred white and red kidney beans, black beans, and just the right amount of chipotle peppers and green chiles for an added kick. Abby complemented the spicy dish with fluffy quinoa and a light spinach salad with carrot, red pepper, and sliced mushrooms.
The Goods: First, the good news. Today we enjoyed another one of Robin Robertson's 1,000 Vegan Recipes, the sun is shining, our Parma! cup runneth over, and it's Friday. My favorite add-in for chili is fresh ginger. The 1000 Vegan Recipes book looks fantastic!
Just a little cilantro on top and I'm good to go. (OK, maybe a little cornbread on the side too.)
Extra beans! Once everything has been added, I like to throw on some more beans up top. Yum!
My Wife Loves Vegan Chili!!! We became Vegan together and she had Never had chili in her life!!! We add Tofutti Sour Cream, just a dab and it sets it off!!! Favorite chili add-in? Chipotle chilies in adobo. If you use enough they impart a lovely smokey, spicy flavor without being too overpowering.
I love chili and still make it the way my mom did, with the exception of the meat. I grew up putting crumbled saltines on top but I rarely have saltines in my house.
Mmmm spicy tempeh- I love love LOVE tempeh, and I will marinate it in a hot sauce mixture before adding it in. Some say it's an addiction.
favorite chili add in.... mock beef crumbles and lots of CUMMMMINNNN!! love love vegan chili-i just made it two days ago.. *champs*. I even use it for chili dog (with soydog, of course!).

My favorites are cheese and onions, hands down. Until Daiya came into my life I did without the cheese but now we're back to Chili Divine!!!
As simple as it may sound, I love to serve my chili over rice.

ooh, a little cocoa powder adds really nice depth of flavor, as do sesame seeds.
I'm a traditionalist: fresh finely chopped cilantro and white onion. Yep, that does it for me.
I usually add some bulgar wheat into my chili for a meaty, chewy effect. And it's perfect served with chopped avocado as a garnish. Yum!

I love both jalepeno chiles and some chunks of avacado. Chili brings me right back to my childhood. Every saturday night my mom fixed chili. Yum!
My favorite add-in is definitely frozen corn. I usually just pour hot chili on top of it so that it defrosts, but doesn't get too cooked before I eat it. Yum.

it's got to be beer for me. you just de-glaze the pot with about 1/2-3/4 cup right after the onions are done cooking. so delicious!

My favorite chili addition is hominy - I get giant hominy from the Ferry Plaza Farmer's market and use it instead of beans (I'm allergic to legumes) - it comes out GREAT - esp if you put cornbread batter on top and bake it when the chili is almost done.

I've got to +1 on the cocoa powder! Plus lots of colorful veggies (peppers, corn, zuccini, etc.). You know, the food needs to please all the senses and what better way to do this than with hot chili on a cold (or even hot) day.

I am a traditionalist. My favorite is probably TVP or other soy product. This assumes tha there is plenty of spice in the chili already.
