Cookbook Week: Red Bean Jamaican Stew

The Chef: Lyndsay

The Menu: Our first attempt at making a recipe from 1,000 Vegan Recipes by our very own columnist, Robin Robertson. Lyndsay took the "Global Vegan" theme from Robin's column, and created this rich, delicious stew of coconut milk, kidney beans, sweet potatoes, and spices, which she served over brown basmati rice and artistically dotted with hot sauce.

The Goods: All this week we'll be making meals from Robin's latest work. Yes, picking five recipes out of a thousand—literally—but we managed to each find something that appealed to us. The good news? This means that there is a recipe for all the lunches we'll make this week, unlike our usual MO of throwing together whatever we have in the kitchen. The better news? Oh - ha - I paid attention now so let me repost. My fave cookbook is the Fresh from the Vegetarian Slow Cooker. My mom got me one this year and I figured I needed to learn how to make something other than chili. All I do is bake normally so it was a good tutorial. :)

Fresh from the Vegetarian Slow Cooker, for sure. Before this book, I thought a crock pots and vegans didn't mix. Now I'm a complete convert!

I don't have one...yet! I'm feeling a really strong pull to a vegan diet, and am slowly working on the transition. This cookbook would be an ideal tome to help me along.

I don't have any of her books yet, but Fresh from the Vegetarian Slow Cooker sounds like it would be a great addition to my bookshelves. Yeah, I'm one of those people who own a sadly neglected slow cooker, and I'd love to have recipes that would help me put it to good use!

Hands down my favorite RR cookbook is Fresh From the Vegetarian Slow Cooker. The Moroccan Vegetable and Chickpea Stew warms the soul as well as the stomach and there's nothing better than waking up on a lazy Saturday to the Breakfast Bread Pudding.

One-Dish Vegetarian Meals. I have five people in my family, and I don't have the time, or the inclination, to be fooling around with making multiple dishes for each meal.

I don't actually have any of her cookbooks. But five years ago when we first decided to become vegan, we borrowed a ton of vegan books from the library, among them Vegan Planet. I still make the red lentil pasta sauce recipe.

Vegan Planet!!! When I went raw a few years ago, I gave it away, thinking I'd have no need for it ever again. A year later I started eating cooked food again and totally regretted parting with it. Please help me fill the void in my cookbook collection!!!
