The Chef: Abby
The Menu: Whole Wheat Penne with San Marzano Tomatoes, courtesy of The Conscious Cook. This flavorful sauce starred sautéed onions and fennel, Swiss chard, Manzanilla olives, tomatoes, and the perfect blend of herbs and spices. The fragrant vegetable-filled sauce topped off a healthy serving of penne, garnished with fresh parsley. Our favorite, the always-delicious kale salad, made a guest appearance with ripe cherry tomatoes and a squeeze of lemon.
The Goods: There’s nothing quite like a hearty serving of pasta to warm up an overcast Monday. Lunch proved to be the perfect midday pick-me-up, and the perfect way to kick-start cookbook week here at Café VegNews! All week long we’ll be giving away copies of The Conscious Cook, the brand-new book from renowned vegan chef Tal Ronnen. For a chance to win today’s copy, tell us in the comments: What’s your favorite comfort food on a brisk, fall day?

Vegan shepherd's pie! Or some sort of thick soup, like corn chowder, mmm.
Roasted butternut squash!

Chowder!
Three Sisters Stew. Rich and hearty...warms one right down to the toes. =)

I just made some apple butter, so right now I'm thinking biscuits hot out of the oven slathered with apple butter. Yummy!
A warm and spicy curry!
Carrot-ginger soup with couscous, kale, broccoli, and chipotle powder. I'm all cozy just thinking about it!
Ohh...think my choice would have to be some meatless vegan chili extra spicy!
A nice hot vegan creamy soup. Potato leek is a good one.
Mashed potatoes. And if I'm really feeling needy for comfort food, I stir in some corn and sprinkle some veggie parmesan on top. Call me crazy, but my wife and I both love it!

Bread just out of the oven!
Tomato soup and some mashed up crackers.

Favorite comfort food? Soup! I love soup, and would have it any time of the year, but it's especially good on a brisk Fall day! I usually put so much stuff in my soups that they end up very thick and nourishing. With a piece of homemade bread, it makes for the perfect yummy comforting meal.
Spicy, creamy, coconut milk curry with brown rice.
Macaroni Hates Cheese with eggplant.
(vegan mac 'n cheese)
Vegan mac & cheese, definitely. Or jambalaya. Both are favorites of mine.
Vegan Nachos with Tofutti Sour Cream.

I would have to say a curry with cauliflower in it or roasted squash and pear soup
Very spicy chickpea curry with brown rice!!!
Pie! Apple comes to mind first, but there are so many fall pies to choose from!
A bowl of split pea soup with a chunk of warm, crusty bread to dip!
A thick soup, full of veggies and legumes.
Tomato soup and vegan grilled cheese sandwich.
Palak Paneer, a cup of hot, black coffee, and a dark chocolate-raspberry truffle for dessert(all vegan of course).
