Mediterranean Wraps


The Chef: Lyndsay

The Menu: Lyndsay took her turn in the kitchen with The Conscious Cook and whipped up Chef Tal’s Mediterranean Chickpea Wraps. A slight change was made due to a rare lack of chickpeas, but her smart substitution of black beans worked perfectly with the flavorful combo of carrots, banana peppers, potatoes, sun-dried tomatoes, and a heat-raising blend of spices. A lovely green salad with colorful cabbage and a sprinkle of pine nuts cooled things off.

The Goods: These warm wraps saved us from the dreary, drizzling rain, back with a vengeance after yesterday’s sunshine. Don’t worry, though, there’s plenty of news to brighten the afternoon. She already wins a lot of praise, but Isa Chandra Moskowitz would be my pick. If it weren't for her starting PostPunkKitchen, I would never met most of the vegans that I know. Her and Terry's Vegan Cupcakes Take Over the World has helped me make the best cupcakes ever!

I would have to give it to Ms. Patrick-Goudreau. Colleen was hands-down the person who made me become vegan, who has been there when I was having any vegan struggles, and the person who has now helped my mom in her vegetarian transformation. And yet, she is just a voice on my iPod (ok, she's technically my facebook friend too, but she has millions of them). I really think she is amazing, and I really couldn't thank her enough for helping to make me the person I am today.

Gene Baur ~ After reading his book "Farm Sanctuary," I was stunned by his level of depth and commitment. He has inspired me to do more with my life, and he makes me proud to be a vegan.

Eric Tucker. As a poor college freshman who had been accustomed to eating second-rate vegan food for most of her life, one visit to Millennium showed me everything that I had been missing. Oh, the flavors! I have never looked at food the same.

I would give it to Supreme Master Ching Hai. She works tirelessly to promote veganism as the solution to climate change (among other things).

Isa Chandra Moskowitz and Terry Hope Romero would be my picks. They've received many honors and awards already, but they deserve many more for their contributions to vegan culture. Veganomicon was the first vegan cookbook I'd ever bought, and it's now happily stained and worn because I use it so much. I can't wait to get my hands on Vegan Cookies Invade Your Cookie Jar!

I'd give an award to Celine Steen (Have Cake, Will Travel). Not only does she always come up with awesomely creative recipes, she is also a wonderful, caring person. Love her!

Hmm this is tough. I'd have to say Lauren Ulm. She makes such great vegan recipes...her "Hurry Up Alfredo" sauce totally fulfills my cheese needs. Plus she's from Boston! :)

Another vote for Vegenaise here. I don't eat a ton of it, but it's amazing how mayonnaise-like it is and that makes me happy.

I'd give an award to the folks at Herbivore Clothing Company. Not just a store... they are doing their part to make a community - online & locally in Portland. They walk-the-walk (or rather, ride-the-ride). And they make vegan cool.

Lula's Apothecary. I told my non-vegan friend about it, she went to check it out, and now she always goes there! She's not lactose intolerant, nor is she veg*n. Sometimes she takes pics of her ice cream when she's there, and she'll email me a pic to taunt me (I'm in the Bay Area). It's great that there is less dairy ice cream that is now being consumed!

It's impossible for me to pick just ONE thing/person I would want to give an award to. There are so many great things and people in the world of veganism that a long list would be more appropriate. But just one??!!
That's it then - I give an award to vegans.

I would give an award to "Vegan Outreach". There is no end to what they have done for the animals and the vegan community. They have been around for a long time and have touch the lives of many potential vegans/vegetarians and brought people together.

Colleen Patrick-Goudreau for The Vegan Table, which is becoming one of my favourite cookbooks. I haven't had a single bad recipe from it yet. Her podcast is pretty rockin' too!

Amy's Kitchen. I worship at the altar of Amy's because they have expanded my horizons in so many ways. For example, I had no idea that I would like Indian food until I got up the courage to try some of their vegan Indian entrees, and now I place Indian food at the top of my list.

It's so VERY tough to choose just one, with SO many wonderful vegan people, businesses, products...but I MUST give props to my DC peeps and vote for Sticky Fingers Bakery. Not only do they have some sinfully delicious desserts, but they also donate their delectable treats to events put on by our local Animal Santuary.
