The Chef: Colleen
The Menu: A splendidly simple and satisfying classic Italian lunch. Colleen pulled out all the stops, with perfectly cooked gluten-free pasta mixed with mushrooms, spinach, and chickpeas all covered in spicy marinara sauce. Alongside our marvelous main was a light, fresh salad made with avocado and mixed greens, and a hearty slice of slightly warmed bread rounded out our delicious meal.
The Goods: It was a big day here at the VNHQ, as we were lucky enough to enjoy our al fresco Monday lunch with three wonderful guests! Eco Vegan Gal Whitney Lauritsen, author and renowned vegan bodybuilder Robert Cheeke, and their close hometown friend Josh all joined us for a lovely afternoon of lunching and chatting—and okay, yes, maybe some marshmallow taste testing. We loved hearing all about Robert's fabulous new book, Vegan Bodybuilding & Fitness: The Complete Guide to Building Your Body on a Plant-Based Diet, and can't wait to read all about his inspiring journey to becoming one of the first vegan bodybuilders. It turns out that Robert loves us too, because he kindly gifted VN with a signed copy of his rockin' new book to give away to one lucky reader. Want to enter for your chance to win? Hey All-
I definitely get excited about walking my commute when the weather gets warmer. I'm lucky enough to live just 2.5 miles from my office, and (though I try to hoof it all year round) I do a little dance when the sun comes out.
My fav outdoor activity in the spring/summer is hiking, hiking and more hiking.
I get excited about many o things in the spring, but I'll say hiking. Love it!
My favorite summer activity has to be bike riding, followed by hiking. This year I plan to take it up a notch. For the first time in years, I am sticking to my new years resolution (usually I quit after two months). This year's resolution was to get in shape and quit smoking. Both are working.
I love going to the beach with my family and working in our garden!
I love to walk around looking at all of the wonderful blooming flowers in yards and parks, and then go home and garden, inspired by all the beauty I have seen in my walks!
Well, right now it's surfing! But when I'm in Canada it's definitely being able to ride my bike to the farmer's market.
i'm excited to get outside and hike, run, bike....anything to be outside!!

Can't wait to go swimming outside.. hiking.. and just being out in the warm sun! ( with sunscreen of course :) )
Cycling, tennis and outdoor yoga are high on my list, but as the days get brighter... the beach is calling me!
my favorite warm weather activity lately is definitely biking! i love riding to work or just riding around for fun.
I lovelovelove walking or hiking in the sunshine! Last year I climbed my first mountain with a friend, and we're planning another trip up there this year!

I LOVE hiking in the summer! and then cooling off at the beach.. aaaahhhh....
I am thrilled to see more of the migratory birds and the "youths" of the indigenous species appearing in canyons where I hike!
My favorite outdoor activity is exploring NYC by foot.
I get pumped to go on Very Long Hiking Treks in the evenings. Also doing Qi Gong/ Tai Chi in the fresh air...
Hiking early in the morning and enjoying the desert scenery before the temperature rises.
MY BEST OUTDOOR ACTIVITY IS WALKING. I WALK EARLY IN THE MORNINGS IN THE SPRINGTIME AND ENJOY THE BEAUTIFUL WORLD WITH MY CHILDREN. ANGIE
