Chicken-free Cannelloni

The Chef: Elizabeth and her dad

The Menu: Faux-chicken and spinach-stuffed cannelloni in a rich, slightly sweet tomato-cream sauce topped with melted Teese. To balance out the heartiness of the main course, Elizabeth made a fresh salad of raw collard greens, romaine, chopped mushrooms, avocado, and sunflower seeds, all tossed in a light vinaigrette.

The Goods: The reason her dad gets credit for today's meal is because, frankly, he did the hard part—aka he veganized traditional cannelloni. If there's anything we love more than eating around here, it's eating something that we don't necessarily have the time to whip up during the workday, and this tasty Italian treat totally fit the bill. Ooh, yummy! Sadly, there's not much I crave from my mother's kitchen, I'm perfectly happy without a steak or a box of Pasta Roni! hehehe.
