Quinoa and Cake

The Chef: Lyndsay

The Menu: A delicious and nutritious blend of quinoas, both red and regular, topped with Punjab Eggplant (thanks, Trader Joe's!) and tofu. A mixed-greens side salad with sliced red onions, avocado, and a light sprinkling of Daiya finished off the plates.

The Goods: As you may have already read on Press Pass, we had a little something special for dessert today, namely a yummy Almond Milk Chocolate Cake from local confectionery Violet Sweet Shoppe. Um, how can you not eat something this adorable?
We served slices of this behemoth à la mode with scoops of Coconut and Mocha Almond Fudge Purely Decadent with Coconut Milk. Sometimes, when it's Monday you need a little something sweet! To share the sugar, um, figuratively, we have a totally sweet deal! All this week, we'll be giving away Sarah Kramer's latest work, her 2010 Go Vegan! Calendar.     I like Living Harvest Coffee Biscotti ice cream as it has everything you need: coffee (flavored) ice cream and yummy chocolate cakey cookies!

    I made some vegan marshmallows this summer and smushed them with some vanilla Soy-Good Ice cream and strawberries, and plopped it on-top of some simple pound cake …yumm

    Home made banana chocolate chip ice cream on top of Peanut Butter/Chocolate tofu mousse pie with a graham cracker crust. Worth a little cellulite!

    This cake looks amazing!

    There are so many cake and ice cream combos I love... Let's say today's choice would be homemade vanilla ice cream on top of a decadent apple cake. I didn't have dessert, so now I'm having a serious cake and ice cream craving!

    I'm the lone weirdo...I want my cake and ice cream separate! Actually, I'm a sorbet girl anyway. So...

    Carrot cake with cream cheese frosting, and raspberry sorbet!

    (Spumoni ice cream is my favorite, but I can't find it in a vegan version anywhere...anyone know where I could find it?

    I'm not a big ice cream girl (haven't found a vegan version that I absolutely must have), but give me some carrot cake anyday. (well, probably not since I have more than 100 pounds to lose)...but ahh, a girl can dream!

    I love "ginger macadamia coconut carrot cake" from "vegan with a vengeance" and simple soy dream vanilla ice cream. Its absolutely delish! It reminds me of autumn but I eat it anytime of year, cause I mean its yummy cake and ice cream! :D

    I love purely decadent chocolate ice cream. Even my non-vegan husband eats it when there is "real" ice cream. Any ideas on how to hide something in the freezer?

    Flourless Chocolate Cake with mocha rum glaze - for those of us who are flour intolerant and chocolate happy this is the ideal dessert. Our women's group has celebrated each other's birthday for many years and one of us always makes the cake. This is what I'll make when it's my turn again!

    The cake looks scrupdillyumpcious! I sure do love chocolate! As for the ice cream, I have not been able to find the coconut milk ice cream in any of the local grocery stores. It sounds wonderful and would like to give it a try!
