
The Menu: Some very highly delicious Chorizo-Spinach Sopes, recipe courtesy of VN columnist Terry Hope Romero's latest book, Viva Vegan! While the recipe itself calls for handmade, fat tortillas, we were a little crunched for time and so substituted blue corn ones. The sizzling SoyRizo and spinach combination were completely wonderful, and the added bonus of shredded cabbage and fresh guacamole made us feel highly celebratory. Also there was salad. Woot, salad.

ReplyDeleteI love a good veggie quesadilla or flautas w/rice and beans on the side. Top it off with some awesome salsa fresco and guacamole and watermelon margaritas & you have the perfect summer meal.

ReplyDeleteMy all time favourite type of Latin cuisine is Caribbean. The exotic fruits that come from this region are endless on the taste buds and in recipes. I adore Papayas, Jackfruit, Starfruit, Guava, Guinep; oh I could go on. Why not try a simple recipe with the inspiration coming from the Caribbean that I like to call Papa YA;
ReplyDelete2 cups fresh papaya cut into cubes, 1/2 cup coconut water, a dash of organic whole vanilla bean powder and a pinch of love. Place all ingredients into a blender and lick your lips and enjoy! *note* If you can find pure raw sugar cane – I would add some of that in the shake; it’s and added delight*
Brown rice and black beans are my favorite because they are so versatile. Add an assortment of spices and vegetables, and you have a quick, easy meal!
ReplyDeleteAvocados, hands down. I like to slice them up and eat them on toast with hummus and lots of black pepper. Not exactly Latin, but definitely delicious!

ReplyDeleteI just had Jicama and Plantains for the first time, and I think I'm in love. I will now be dipping strips of Jicama in guacamole with grilled plantains on the side!
